Whip-up Wednesdays with Greg

Hi homies! Hope you're all doing well and staying safe and healthy with your families in quarantine! As a part of our '21 Days of Goodness', we've gotten our bassist and spiritual leader, Greg, to take you on a little cooking journey that's simple, healthy, and tasty!

Ingredient List:


2 large sweet potatoes 1 red onion 1 clove of garlic 250g red split lentils 600ml water vegetable stock Some cumin, turmeric, chillis to taste Oil/butter for frying Extras: feta, rice, spinach


Recipe:


Chop the onion and garlic into small pieces.

Chop the sweet potatoes into small pieces (the smaller, the better - smaller cooks faster).

Fry the garlic and onion on medium-high heat for 5-10min, until the onion is soft.

Add spices/chilli to taste, and stir for 1 minute. Then add the sweet potato, and mix everything around so that the potato is covered in spices.

Mix the water and the stock mix, and then add them into the pan/pot with your lentils.

Bring the water to boil, then reduce heat to low-medium and cover with a lid.

Leave it to cook slowly for 35-50min or until sweet potato is cooked though, and becomes a mush.

Serve with rice, chutney or add in spinach or feta (be experimental, put your own spin on it and share it with us).


Pro Tip: Maybe ask your family if you can cook dinner tonight, and surprise them with your surprisingly cultured culinary skills! It'll be a really nice way to spread positivity and #keepthelovealive, so get on it!
